I love making myself breakfast everyday, but not everyone has that luxury or sees it as a priority. The rise in the popularity of energy bites/balls caters to that need.
The combinations are endless. The rules are basic – high energy nuts, a finely milled ingredient as a filler, and some kind of sticky nut butter as a binder. To keep the carbs to a minimum, this recipe has no added sugar or oats. Instead I used ground flax seeds as the filling agent. To up the protein content of this recipe, the flax seed can be easily subbed with protein powder. These are very high in energy and feeling. fit for a beast.
- almond butter, ⅔ cup
- pecan pieces, ⅔ cup
- ground flax seed, ⅔ cup
- apple rings, chopped finely (or nutribulleted), ⅔ cup
- cinnamon, 1 tsp
- sweetening agent, to liking (optional)
- toppings (optional)
- warm almond butter in microwave for 20 s
- mix into dry ingredients
- form into balls
- roll in toppings ( i used chia seeds and pumpkin seeds powder)
