Braised pork tongue

The tongue, one of the strongest muscle of the body – can my slow cooker break down its striated fibre? Yes it can! Although the preparation is a bit more work, the result is incredibly tender and flavourful meat.

The annoying is step is the removal of the film on the tongue after it’s been braised. It’s a very versatile meat and can be seasoned with a variety of ways!

2016 has been off a good start in terms of creative cooking! I served mine with baby bokchoy and quinoa. Delicious!

Ingredients
  • pork tongue
  • aromatics (garlic, thyme)
  • seasoning of choice (salt, pepper, paprika, red wine, worcestershire sauce)
Instructions
  1. place aromatics and tongue in crockpot
  2. season and add liquid (wine or stock)
  3. cook on high for 4-5 hours
  4. remove the film on tongue (peel or scrape with back of spoon)
  5. remove oily film in the sauce and reduce
  6. slice and serve sauce on top
