Cacao nibs chocolate cookie with coconut oil

I woke from the sound of a 6 AM text, one of many early texts ranging from 3-5 AM that i’ve been accustomed to receiving lately. The topics range from random thoughts to news to research articles…This morning, I felt like baking…

I’ve come to possession of a rather large quantity of cacao nibs and have been meaning to try them out in baking. The cookie dough is easy to make but the cookies don’t expand as much as a traditional treat and tastes very “short” and crumbly.


Cacao nibs chocolate cookie with coconut oil

Ingredients
  • coconut oil, ½ cup
  • sugar, ½ cup
  • egg, 1 medium
  • flour, ⅔ cup
  • cocoa powder, ⅓ cup
  • baking powder, 1 tsp
  • cacao nibs, any amount you like
Instructions
  1. preheat oven to 350
  2. beat coconut oil (room temp, semi-solid), sugar and egg with a hand or stand mixer
  3. add in dry ingredients
  4. mix together
  5. form dough balls and flatten
  6. bake for 10-15 min
