Soups are the best for winter. Just because we are having some real mild weather here in Toronto doesn’t mean you can’t enjoy a bowl of hearty, fragrant soup filled with beta carotene!

Ingredients
  • carrots (3)
  • onion (1)
  • ginger (a nob, grated)
  • curry powder (1tsp)
  • stock (veg/chicken – 2 -3 cups)
  • salt and pepper
Instructions
  1. dice and cook onion until softened
  2. put in curry powder, ginger, carrots, and stock in the pot
  3. bring to boil then simmer for 15 min
  4. blend with emersion blender
  5. salt pepper to taste
