Duck fat roasted cauliflower

this is my standard meal in the winter. The oven fill my tiny box in the sky with the aroma of cumin and paprika. I’m feeling a lack of inspiration for cooking these days so heres the cop out recipe that’s so easy it can’t be called a recipe…

I first had roasted cauliflower at Fat Pasha, where they roast a whole head of cauliflower and drizzle on yogurt sauce and pomegranate seeds. As delicious is it is, it’s a bit too effort intensive to replicate at home so I came up with this alternative. I like to dip it in a spicy yogurt sauce, which is just a combination of Greek yogurt and siracha.

Ingredients
  • Cauliflower
  • Other root vegetables (sweet potato, carrot)
  • Salt and pepper
  • Spices (cumin, paprika)
  • Oil (duck fat, duh, or olive oil)
Instructions
  1. Preheat oven to 400 (turn on the fan if that’s an option)
  2. Cut cauliflower into florets and other veggies into similar size
  3. Toss with oil, spices, salt and pepper (enough to thinly coat)
  4. Roast for 40 min or until charred
