Happy holidays

First Christmas I spent back in the city in 3 years and I’m working during the holidays while my family left the city for a short vacay. Inspiration of new inventive recipes is of short supply these days, but that doesn’t stop me from serving a Christmas dinner for a few lonely souls.

For dinner, I served up some succulent coq au vin (still struggling to keep the skin on while browning), roasted brussel sprouts, mashed kabocha squash, and dark chocolate mousse for dessert.

The next day was filled with more indulgence with sweets lying around everywhere on the wards, so the day after I decided to whip up some healthy snacks in the form of sweet potato chips. Takes a little longer to bake at low temperatures to prevent burning and the result is a deliciously crunchy snack of natural sweetness and salty variety.
