mango tart

My friend and colleague is hosting a get together at his place, which happens to be 9 floors up in my condo. This provided the perfect opportunity for me to be creative in my kitchen. Initially I wanted to make something a bit more extravagant but busy work schedule dictated to resort to this simple but visually stunning dessert.

It was my first time making a tart shell (I usually go with store bought). It turned out very buttery and shortbread-like and the coconut sugar I used gave it a great aroma!

The most trying part of this recipe is cutting all the mangos into thin strips and arranging them. My recommendation is to put some netflix on and get to work.

Ingredients
  • mangos 4-5 medium sized
  • flour 1.25 cup + 1.5 tbsp
  • sugar 3+3 tbsp (I use coconut sugar)
  • butter 1 stick
  • egg yorks (3)
  • milk 1 cup ( i used cashew milk)
  • salt ¼ tsp
Instructions
tart shell
  1. preheat oven to 375
  2. melt butter in microwave
  3. mix butter, floor, sugar (3 tbsp) and salt in a bowl until it comes together to form soft dough
  4. press dough onto bottom of 9-inch tart pan and up the sides (i used a plastic wrap and bottom of measuring cup) and make sure it’s even and thin
  5. put in fridge for 30 min
  6. prick bottom with fork and bake for 20 min
pastry cream
  1. cream sugar (3 tbsp) and egg yorks together until pale
  2. add flour (1.5 tbsp) and mix until no lumps
  3. scald milk until bubbles form on the rims
  4. add milk bit by bit to egg mixture and mix/combine
  5. add mixture back to stove and cook until thickens (coats back of spoon)
  6. remove from heat, put in container and place plastic wrap on top to prevent skin formation
assembly
  1. peel and cut mangos into thin pieces
  2. wait until tart shell and pastry creams are cool and spread pastry cream inside (i went for less cream but the recipe can be doubled easily for more pastry cream filling)
  3. arrange mango slices like a flower
  4. sprinkle whatever you like on top ( i used chia seeds)
