Miso garlic asparagus salad

Spring time for spring veggies. Picked up these beauties on sale on my weekly (more like daily) Chinatown groceries run.

I’ve been in a creative rot lately eating frozen home made dumplings for dinner everyday. Time to get back on track for the blog and my waistline. I normally prefer asparagus roasted and drizzle with balsamic vinegar for the woody aroma. This recipe is so simple, it can hardly be called  recipe – just steamed asparagus with a miso dressing.

Miso garlic asparagus salad
Ingredients
  • asparagus
  • chilli peppers
  • miso paste, 1tbsp
  • garlic, minced
  • sesame oil 1/2 tbsp
  • rice vinegar 1/2 tbsp
  • sugar, 1/2 tsp
Instructions
  1. steam the asparagus until just folk tender and dump in ice water to prevent overcooking
  2. mix the rest and drizzle on top
  3. i topped mine off with a sunny side up egg
