Miso garlic asparagus salad
Spring time for spring veggies. Picked up these beauties on sale on my weekly (more like daily) Chinatown groceries run.
I’ve been in a creative rot lately eating frozen home made dumplings for dinner everyday. Time to get back on track for the blog and my waistline. I normally prefer asparagus roasted and drizzle with balsamic vinegar for the woody aroma. This recipe is so simple, it can hardly be called recipe – just steamed asparagus with a miso dressing.
Miso garlic asparagus salad
Ingredients
- asparagus
- chilli peppers
- miso paste, 1tbsp
- garlic, minced
- sesame oil 1/2 tbsp
- rice vinegar 1/2 tbsp
- sugar, 1/2 tsp
Instructions
- steam the asparagus until just folk tender and dump in ice water to prevent overcooking
- mix the rest and drizzle on top
- i topped mine off with a sunny side up egg
perfect lazy sunday afternoon…oh wait it’s monday
