Salted duck yolk and lotus seed truffle

I have not been cooking on postcall days. Instead I’ve developed a new ritual where I head to a Chinatown bakery and pick up myself a delicious fatty chinese pastry. My favourite is a smaller version of duck yolk lotus seed mooncake. The perfect combination of sweet and salty richness is the perfect cure for fatigue induced nausea.

I thought about replicating the pastry with all the taste and none of the hard work of baking and came up with this. The ingredients are super simple: salted duck yolks, lotus seed paste and any form of topping you wish.

Other pastes can be found in chinese groceries stores as well such as red bean and black sesame. The combinations are limitless. Toppings wise I used black sesame and chia seeds, matcha powder, and coco powder with himalayan salt.
